Caretaker’s Cottage at #23 in 2023 is a subtle temple to great drinks: the lighting, the sound, the natural timber adorning much of the room – everything conveys warmth and understated elegance. And that’s how the hospitality feels, too. They don’t shout their pedigree to the world, though each of the bartender-owners (Rob Libecans, Ryan Noreiks, Matt Stirling) have worked at the world’s best bars. The clue to the name is in the space’s history: an old small cottage where the Wesley place church’s caretaker resided. Inside, you’re up close and personal with the bartenders making your drinks behind the bar, which also functions as a DJ booth – a high-grade record player setup is embedded along one side of the bar, with stacks of vinyl set on the back bar beneath two large, warm-sounding golden speakers. From that bar comes drinks made with precision, whether that is Melbourne’s best Guinness or what is probably Australia’s coldest Martini.

For those yet to get acquainted with Maybe Sammy in The Rocks, its luxurious styling nods to old-school Vegas glamour, all blush pink velvet banquettes and lush indoor greenery, while the list of theatrical signature drinks pays homage to the classics. The World's 15fh Best Bar has praised it for being "the Sydney cocktail bar where great stories begin", all "thanks to the emphasis on guest experience" — and calls out its latest beverage menu, which it calls the venue's "best selection of drinks yet".

Maybe Sammy is the Sydney cocktail bar where great stories begin. That’s thanks to the emphasis on guest experience, whether Tuesday at 6pm or on a pumping Saturday night. Since 2019 the bar team here have been making memorable evenings for locals as much as the international crowd who make the pilgrimage. In 2023 the team has ratcheted things up another notch, courtesy of their latest Mirage menu – high class AI-generated art on each page, months of development, and a full team effort have resulted in their best selection of drinks yet, where the non-alc selection shares equal billing with its fortified friends. There’s a new food menu from a highly regarded chef, so that the bar food matches the quality of the cocktails. When paired with the experience on offer – bubble guns, elaborate and experiential serves, full team dance routines – Maybe Sammy makes a night to remember. The bar is again lauded with the title of The Best Bar in Australasia for the 2023 edition of the 50 Best Bars list.



In December 2014 Martin Hudak walked into the American Bar as a senior bartender, straight from a little café in Slovakia. On his first day his locker wouldn't open, his jacket was too big and he found himself stirring his first Martini – a drink no one had ordered from him in Presov before. From there it only got better.
