There is nothing as important as the future of an industry, and here at this TAFE-run restaurant you get to sample not only the cooking skills, but the skills of the fresh young faces who want to be the future front of house heroes, too.
It's hard not to feel you've struck gold when you discover this place; a fine diner with impeccable service and a multi-course meal for under $30. It would feel very underground if it were not for the skyscraper views across Ultimo. The training restaurant at TAFE's Sydney Institute does menu changes according to the student chef on the night, but a seared scallop appetiser, crisp-skinned salmon with creamed potato main, kangaroo, beef cheeks, a baked cheese cake. That these guys are still students bodes very well for the future of Sydney dining.
